This is slightly weird, but I figure I will offer it up anyways in the middle of January.
We have been cooking sweet potatoes in our instant pot. Just slice the skin lengthwise and throw them in for 10 minutes with a little water. When they are done, I just pull the skin off with my fingers and make a big pile of taters on my plate.
The slightly weird-ish part is the toppings I have been going with...butter, salt, pepper, maple syrup (normal so far)...then sourcream and almonds! YES, ALL on the same pile! I don't even remember how this started but I have done it several times now and am convinced that it all works well together.
