What a fun week it was...Thanksgiving this year, more than anytime before, was such a restful week with the family. I hope that you each had time to reflect, be thankful, and eat good food. If you had a stressful or mournful holiday because of various circumstances, then peace be with you this holiday season.
As we transition into our “WINTER” months, we get to do some unusual things with our boxes. We begin to include some products that might not make it during our other seasons.
FOR INSTANCE….

-Peaceful Fruits (aka “healthy fruit roll-ups”)
These are all things that you can buy anytime you want in our online store, but we want you to be able to begin to stock your pantry (although I eat them so fast that the pantry never even sniffs them).
Keep enjoying the fresh greens, roots, and fruits as we enter into the season of the concrete skies. Each nutrient that keeps your physical, emotional, and spiritual being in its best form is from the best growers in the state of OHIO.
We have so many cool surprises planned over the next couple of months, that I wish I could just tell you them all right now...but ask my kids, I am the best secret keeper ever! (Especially pre-Christmas)
Speaking of Christmas...because of the calendar this year, there are really only 2 deliveries after this week before the big week! MEANING, think of all the presents you need to buy, the food you need to prepare, the parties that you are hosting, and let’s get your friends and family the best Ohio has to offer. Keep attached to main bulb until ready to eat.

Storage:
After washing your lettuce leaves, spin them dry and place the slightly damp greens in a container. A container is best, but you can use a plastic bag if you keep a corner open (to allow some airflow in). Add a few paper towels to absorb excess moisture and you'll be able to store these greens for seven to 10 days. Any greens attached to a main bulb keep attached until ready to eat!

Storage:
These greens are very perishable, so wrap in damp paper towels and store unwashed in a perforated plastic bag in the crisper drawer of the refrigerator. They should keep for a couple of days.

Shiitake Mushrooms
Storage:
Shiitakes will keep for a couple of days if stored in the fridge, loosely covered with a damp paper towel.

Microgreens
Storage:
Keep microgreens between damp paper towels, and make sure they are cold and covered in a resealable bag or container. Wrapped this way, they'll last in the fridge for about a week. Keep greens covered right up until they hit the plate—this will ensure that they don't wilt or dry out.
Recipes: Microgreens are often used in Wraps, Sushi, Stirfry's, Soups, and Spring Rolls. Although fragile, microgreens are versatile and flavorful and can compliment any dish

Spinach
Storage:
To keep spinach fresh, store it in the refrigerator in a deep bowl, upside-down with the stems submerged in cold water and the leafy tops covered with a plastic bag. Drain well before using.

Storage:
Store in a reusable container in the crisper drawer.

Parsley
Storage:
Wrap the herbs loosely in the dampened paper towels and place them in a resealable bag. Seal the bag and refrigerate. This method, which allows the herbs to retain plenty of moisture, will keep your herbs wilt-free for 3–5 days.
