What kinds of salsas are we seeing out there in everyone’s kitchens? Peaches can be added to your fresh mixes, as well as the lemon balm, wax pepper, and cuke’s that some of you will have this week...the Hungarian's are bringing the heat though so don’t be caught unawares!

We sold out our “Night On The Farm” dinner for Saturday Aug. 10th, so we decided to roll on into Sunday Aug. 11th to try and get as many people out to the Ballmer Farm (The Farm On Kenyon Road) as possible.

Lastly, keep thinking about the winter months when there will be NO local tomatoes, NO local peppers, NO local cucumbers etc.
How can we preserve them now?? Freezing, Canning, Fermenting OH MY!! Hearken back to the days of yesteryear when our fore-mother’s and father’s were ahead of their time by SECURING their food futures.
I was telling someone today that we know we have done it right when we run out of the corn we put up the previous year, right when the fresh sweet corn is coming in here in OHIO! If you don’t know how to do it, just come over and I’ll have my wife show you...HA!

Peaches
Storage:
Tree-ripe peaches can be refrigerated for 2-3 days without loss of quality or taste.

Cherry/Grape or Artisanal Cherry Tomatoes
Storage: Keep at room temperature on the counter away from sunlight.

Butterhead Lettuce
Storage:
Put your lettuce into a nice big bowl, and drape a paper towel or two over the top so moisture doesn't settle on the leaves while your salad sits in the fridge. Cover the whole thing with a really tight seal of beeswax wrap, and store.

Blueberries
Storage:
Avoid keeping them in the coldest part of the fridge, or they will get damaged from the cold. The best place to store the berries is on the middle or bottom shelf. Try not to keep them in the crisper.

Lemon Balm
Storage:
Keep the leaves and stems in big pieces to retain as much flavor as possible. Store your herbs in paper bags or glass jars (avoid plastic bags as they may lead to condensation... and planet harm). Only when you're ready to use your herbs should you crumble them up to release their essence.

Curly Kale
Storage:
For a bunch of whole leaves, it's all about avoiding excess moisture. Wrap the bunch of kale in a layer of paper towels, and store in a container in the refrigerator crisper drawer. The kale should be in great shape for a week.

Ping Tung Eggplant
Storage:
The best place to store eggplant is at room temperature, where it's likely to last longer. Keep eggplant in a cool spot, away from direct sunlight, and use it as soon as possible after harvesting.

Bell Peppers
Storage:
Refrigerate peppers, unwashed, in a container in the vegetable drawer. Keep them dry, as moisture will eventually cause them to rot.

Fresh Cucumber Salad

Zucchini
Storage:
To store zucchini in the fridge, keep the squash whole, dry and unwashed. Store them in an open container to encourage air circulation, and pop them in the refrigerator crisper drawer.

Beets
Storage:
Store the leaves in a separate plastic bag and use within two days. The root bulbs should also be bagged and can be stored in the refrigerator crisper drawer seven to 10 days. Cooked or canned beets may be refrigerated up to one week. Fresh cooked beets may also be frozen up to 10 months.
