Welcome to 2020.  

Wow, what a statement.  If I were watching a movie, and the screen said, “OHIO: 2020”, I would assume they meant that was some time in the future.  Nope. It’s today.

And TODAY we find ourselves in the middle of the 1803 Eating Challenge.

What’s the 1803 Eating Challenge?

Simple.  EVERYTHING that we eat for the month of January is going to come from Ohio.  

This will 
-increase the amount of plants we eat
-decrease the amount of sugar, salt, and snacking we do
-patronize our OHIO food growers during the “off” season

It’s January 1st and so far today I had a holy basil tea grown at Bailiwick Herb Farm, an apple from Glen Hill Orchard, a bag of those new “baby cukes” from 80 acres farm, and scrambled eggs from Copia.

From Bauman Orchards this week...BOSC Pears 

Bosc pears have a more firm, dense flesh than other pear varieties, so they are ideal for use in baking, broiling or poaching. They retain their shape and texture better than other varieties, and their flavor is less likely to be overwhelmed by the use of strong spices like cinnamon, clove or nutmeg. Of course, they are also excellent for fresh eating, particularly by those who prefer a firm texture.

The variety was first planted in 1832 or 1833, and those trees first bore fruit in 1836. The first plantings were done in the eastern U.S., on large estate orchards and later commercial orchards.

Storage:    Store in your pantry.

Shiitake Mushrooms

Storage:   Shiitakes will keep for a couple of days if stored in the fridge, loosely covered with a damp paper towel.

Storage:  Store in a resealable container with a paper towel to absorb excess moisture.

Microgreens

Storage:  Keep microgreens between damp paper towels, and make sure they are cold and covered in a resealable bag or container. Wrapped this way, they'll last in the fridge for about a week. Keep greens covered right up until they hit the plate—this will ensure that they don't wilt or dry out.

Recipes: Microgreens are often used in Wraps, Sushi, Stirfry's, Soups, and Spring Rolls. Although fragile, microgreens are versatile and flavorful and can compliment any dish
