Box #14

Let’s get back to talking about the good in this world shall we?

Any of the citrus that you are seeing from us this winter is from our new friends down in Florida at Thorpe’s Family Farm...again, it’s the first time we have gone outside of Ohio for anything but we are sure glad we did.  Those vitamins are much needed right now and I know that I have been crushing that OJ that was in the boxes last week.

I heard a great podcast talking about food that builds our immunities.  ROOTS were the #1 thing they were hitting on...radishes, sweet potatoes, beets, and carrots to name a few….I was super excited because this is right in our OHIO winter wheelhouse.
**PRO TIP:  They said to leave the skins on.  If I was buying them from the grocery store and did not know who grew them, I would advise against that.  HOWEVER, we know the soil our growers are using is being regenerated and treated with only the good stuff, so give it a wash, and then eat away!!

Does it not feel amazing right now to eat food that you know where it came from?  I feel so confident and stress-free through all of this, personally knowing each person that we are sourcing this food from.

Sentimental Segment: It’s you that are on our hearts and minds as we plan each week, as we plan each season with our growers.
The way that we are logistically making this happen is a total pain in the neck.
Clayton, one of our 2 full-time driver/delivery people is literally going to 13 places today to pick up food.  He will get in late tonight, unload after being on the road all day.  Then, get up first thing in the morning to pack boxes with us. Then, hit the road tomorrow afternoon and deliver 50 home deliveries before getting back here late again tomorrow night.  He’ll do it again Thursday and Friday and then text us all his favorite phrase after putting in some serious work…”Easy Money”.  He’s not talking about actual money folks...he’s talking about his mindset heading into each day.

Gratitude
Grace

Peace and Blessings” (also a Claytonism...before he leaves each day he says this to all of us!) ...We’ve shortened it to “P’s and B’s”

All of us at YB share this same heart:  Our communities, our growers, our eaters, and all the people that have had enough of the status quo and being handed systems that are broken and hoping that one day someone will save us.

Time to stop waiting.  Time to step up.  Each of you has answered the bell by taking your food choices back into your own hands.  Congrats.  Keep fighting!

Oranges (that's an actual picture of your oranges...for real)

Storage: Whole oranges store best unwashed, because moisture on the skins can lead to mold and spoilage. Store the oranges at room temperature out of direct sunlight or in the refrigerator for up to two weeks. Keep them in a net bag or an open bowl so air can circulate freely.

Sweet Potatoes

Storage:   Store the sweet potatoes in a basement or root cellar. If neither option is available to you, store them in a dark, cool, and well-ventilated cupboard or pantry away from strong heat sources.

Tumeric

Storage:   Store fresh turmeric in the refrigerator in a plastic bag or airtight container for a week or two, or freeze it for several months.

Mini Swiss Chard

Curly Kale

Storage:  For a bunch of whole leaves, it's all about avoiding excess moisture. Wrap the bunch of kale in a layer of paper towels, and store in a container in the refrigerator crisper drawer. The kale should be in great shape for 3-5 days.

Spinach

Storage:  Store fresh spinach in a clean container wrapped with paper towels. Place it in the refrigerator in the crisp drawer to save the greens for up to ten days. Containers will protect the greens from being moved around or crushed like they would in bags. Paper towels absorb the moisture, and keep your spinach fresh.

Radishes

Storage: Remove the leaves and store radishes in the crisper of the refrigerator. They will keep for up to a week. If storing the greens consumer within 3 days.

Recipe: Colorful Vegetable Lettuce Wraps
Pickled Radish Tacos

Mesclun Mix

Storage:   Wrap the lettuce in a dry paper towel and place it in a storage container. You can reuse the container it came in, as long as you wash it first. To maintain the proper temperature and moisture level, store your lettuce in the crisper drawer in your fridge.

Recipe: Simple Mesclun Salad
Pro Tip: Salad not your thing? add to some hearty sandwiches!

Thyme

Storage:   To keep thyme tasting fresh for even longer, roll it in a damp paper towel and wrap it in beeswax wrap. For long term storage stand your thyme sprigs up like a bouquet of flowers in a drinking glass or jar with about an inch of water inside.

Recipe: Creamy Lemon Thyme Chicken

Baby Cucumbers

Storage:  Wrap the cucumber in beeswax wrap. Keeping the cucumber wrapped minimizes the amount of moisture on the cucumber. After wrapping, put the cucumber in the refrigerator. This should keep it cold enough to stay fresh for 7+ days.
