We had a MAJOR influx of product this week to meet the new demands that our community is ordering.  Every single time you place an order it’s like you are showing up at the polls and casting a vote for the way you want this state to handle it’s agricultural, local economies, and health care…(let food be thy medicine...someone smart said that once).

We are hitting the time of year where there are a LOT of green things coming your way.

We try and vary it as much as possible so that you aren’t just getting a bunch of “lettuce”.  You will almost always get a cooking green like kale, chard, or spinach.  You will almost always get a lettuce head or mix and sometimes a specialty green like arugula.  Finally, you will usually get an asian green.  
Keep in mind that ALL of these greens can just be eaten raw and mixed and matched with each other.  You can also saute them, put them in soups, add them to smoothies etc.  

As spring gives way to summer you will see some of these greens decrease and give way to other things like tom’s, berries, melons, cukes, and zukes.


The ORANGES are from our new friends, the Thorpe’s, down in Florida.  A couple things....
-They look weird.  Trust us, we cut into about 50 different ones and they were ALL perfect on the inside.  This is a testament to organic agriculture.  
-They are “old world” oranges….meaning, they have a crazy tropical flavor, not like the hybrid oranges you get in the grocery store.  
-They are great for juicing
-They will ward of scurvy

I will continue to thank you for your patronage.  I will continue to apologize for when we mess up (last week wasn’t our best showing) (HOWEVER, we really focused on “process” this week and I think you will find that your orders are a lot better)(I can’t believe I would even write that and jinx us…)(who uses this many parentheses?) 

Seriously, as you have heard me say for years...this is your company...you are the “shareholders.”  We literally exist to bring you the best food we can find in every category...produce, meat, dairy, even SNACKS!  If something ain't right, we better get it right...soooo, tell us what need, want, and require and we will make sure and get you two out of the three.

Oranges

Storage: Whole oranges store best unwashed, because moisture on the skins can lead to mold and spoilage. Store the oranges at room temperature out of direct sunlight or in the refrigerator for up to two weeks, depending on your preference. Keep them in a net bag or an open bowl so air can circulate freely around the oranges.

Recipes: Orange Chicken Sauce

Lettuce Tub

Storage:   Cover the top of the greens with damp paper towels and store in your refrigerator. Hydro lettuce with the root attached will last about a week if treated kindly. Remove leaves right before consumption.

Recipe: Carrot, Cucumber, and Balsamic Salad

Radishes (daikon white pictured)

Storage:  Remove the leaves and store radishes in the crisper of the refrigerator. They will keep for up to a week. If storing the greens consumer within 3 days. 

Garlic Roasted Radishes

Spinach

Storage:   Store fresh spinach in a clean container wrapped with paper towels. Place it in the refrigerator in the crisp drawer to save the greens for up to ten days. Containers will protect the greens from being moved around or crushed like they would in bags. Paper towels absorb the moisture, and keep your spinach fresh.

Recipe: Spinach Artichoke Dip

Mushrooms

Storage:  Place whole, unwashed mushrooms in a brown paper bag and fold the top of the bag over. Then stick the bag in the main compartment of your refrigerator.

Fireworks Tomatoes

Storage:   Keep tomatoes at room temperature for the best flavor. You can keep them in a bowl on the counter for super easy, healthful snacking. At room temperature, they will keep for up to three days.

Cucumber

Storage:   Wrap the cucumber in beeswax wrap. Keeping the cucumber wrapped minimizes the amount of moisture on the cucumber. After wrapping, put the cucumber in the refrigerator. This should keep it cold enough to stay fresh for 7+ days.

Arugula

Storage:   Place in a large reusable container with a half-sheet of paper towel to absorb moisture. Use within 2-3 days.

Recipe: Lemony White Bean and Arugula Salad

Microgreens

Storage:   Keep microgreens between damp paper towels, and make sure they are cold and covered in a container. Wrapped this way, they'll last in the fridge for about a week. Keep greens covered right up until they hit the plate—this will ensure that they don't wilt or dry out during service.

Super Greens Sandwich

Sweet Yellow Onion 

Storage:   Whole onions are best stored in a cool, dry, dark and well-ventilated room. Ideal places include the pantry, cellar, basement or garage. Peeled onions can be stored in the fridge for 10–14 days, while sliced or cut onions can be refrigerated for 7–10 days.

Recipe: Marinated Slow Roasted Onions

Red Rosie Pac Choi

Storage:   Store in a container/beeswax wrap in the crisper section of your refrigerator for up to a week. Wash immediately before using.

Recipe: 10 Minutes Choi

Ramps

Storage:   Roll them in a damp paper towel, place in an unsealed plastic bag, and keep them in the fridge. Make sure the delicate leaves are covered by the towel, and don't bend or crush the plant. Don't be surprised when your entire refrigerator smells like garlic.
