Pie Pumpkins…technically, any pumpkin can be turned into a pie…BUT…we go after the pumpkins that are specifically bred for this most wonderful dish. They are small, dense, and rich in color, and they have a sweet, full flavor.
Pro Tip: Use Butternut squash in your pies…just as good if not better.

Here’s the thing, do we have butter? YES…for now.
BUT, it doesn’t solve the problem. What is being reported is that “Dairy farmers are facing higher costs which leads to less milk being produced and less butter being churned.”
Higher costs do not CAUSE there to be less milk being produced necessarily. What ISN'T being said is that the farmers are always the ones that take the hit. The 2 or 3 biggest dairy companies in the country, which control the milk supply, decide what they are going to pay the farms for their milk….and how much they will buy. When you hear about people having to “dump” milk, it’s because their buyer decided they didn’t want all their milk that week (and they aren’t allowed to sell it to anyone else), and so they had no other outlets.
Second, the way our current market is set up, it incentivizes the OVER-production of milk…meaning, putting undue stress on the animals, essentially turning them into milk “factories”.
How could this be corrected?
#1 - The customer has to be willing to pay the actual price of butter…it SHOULD be expensive…it only uses a part of the milk and it has to be processed, packaged, and shipped all over the country.
#2 - The customer has to be willing to do the work of finding out how they can support farms directly. Our 2 biggest dairies are Paint Valley and Sweet Grass Dairy. Neither of them sells into the bigger system because they have figured out a way to make a living on a small herd of cows that are being husbanded in a way that causes them to flourish.
Why don’t more dairies do this? Because they don’t have a committed customer base. Do you think these farmers LIKE being beholden to the giant conglomerates that are only out for high profit no matter the cost to the communities, land, and animals that the milk is coming from? They do NOT, but they have never been shown an alternative.
Let’s keep doing the hard work of figuring out how to repair the broken areas of our food system.
