Dandelion Greens Pizza

Don't be intimidated by dandy greens--put 'em on your pizza! Any hint of bitterness can be offset by sauteing first, or just have the sweet tangy sauce and goat cheese be the counterbalance! With this effortless way to get more greens, how much fun are New Year's resolutions??
INGREDIENTS
For the pizza:
One pizza crust (see below) or buy premade here or gluten-free here.
1 cup shredded mozzarella
1/2 cup goat cheese chevre
1/2 cup spreadable ricotta
1/4 cup sundried tomatoes
1 cup Dandelion greens (sauteed with salt and coconut oil)
1 jar Pizza sauce
1 tsp Pizza seasoning
For the crust (instructions here):
3/4 cup warm water
1/2 tsp sugar
2 tsp active dry or instant yeast
2 cups all-purpose spelt flour or gluten-free flour (plus more for dusting)
1 tsp Himalayan salt

INSTRUCTIONS
Preheat oven to 400 degrees. Cook crust according to package directions, or make your own here. Spread a thin layer of ricotta cheese over the crust. Then top it with shredded mozzarella cheese. Next, add a thin layer of sauteed dandelion greens and sundried tomatoes. Finish by crumbling goat cheese over the top.
Bake your pizza according to the directions if you’re using a premade pizza crust or according to the recipe for a homemade crust.
