Phenomenal Turkey Salad with Grapes

These grapes have phenomenal flavor. And Green Acres Organics has the best turkey around. Put them together, and you have the simplest gourmet lunch for school or work that you ever did see! That you ever did see. That you ever did see...and the grapes in the salad and the salad in the bun and the bun in the mouth and the lunch gets eaten all gone, all gone...and the lunch gets eaten all gone.
INGREDIENTS
1 cup sliced table grapes
1 cup diced celery
1/2 cup coarsely chopped scallions or finely diced candy onion
3/4 cup coarsely chopped pecans, optional
1/4 cup pine nuts
3 to 4 cups diced cooked turkey breast (or buy smoked prepared sliced here)
1 tablespoon finely chopped fresh parsley (curly or flat leaf)
1 teaspoon freshly squeezed lemon juice or organic lemon juice
1/4 cup chicken broth
3/4 to 1 cup mayonnaise
1/8 teaspoon freshly ground black pepper
INSTRUCTIONS
Gather the ingredients. Cook turkey in oven or thoroughly in pan and cut into chunks.
In a bowl, combine the sliced grapes, celery, green onion, pecans (if using), cooked turkey, and parsley (if using). Toss to blend ingredients.
In another bowl, combine the lemon juice, 3/4 cup of the mayonnaise, 1/4 cup chicken broth, and pepper; blend well.
Stir the mayonnaise mixture into the turkey mixture until blended, adding more mayonnaise if needed. Add salt and pepper to taste.
Serve in bread or buns for sandwiches or on greens or romaine lettuce leaves for a lighter lunch salad.
