Sticky Honey Sesame Chicken & Pak Choi

Pak Choi is a tender green you will love in this sweet and zesty chicken meal designed to please everyone in the world. No one could be offended by this flavor--just replace the chicken with tofu if serving vegetarians. But if anyone defies gravity and logic and does NOT like it, the more the pak choi-ier for you!!
INGREDIENTS:
INSTRUCTIONS:
- Place the chicken in the large bowl with the corn flour, a pinch of salt and pepper. Toss the chicken to coat evenly.
- Finely chop or grate the garlic and ginger. Roughly dice the pepper.
- Trim and cut the pak choi into bite-sized pieces. Finely slice the spring onion
- Heat the medium frying pan with 1 tsp oil on medium-high heat. Once hot, add the chicken and pepper and cook for 8 mins until golden brown.
- Add the garlic, ginger and half the sesame seeds, then cook for 1 min
- Add the tomato puree, tamari, vinegar, honey and 2 tbsp water (1 tbsp for 1 person).
- Cover with a lid and cook for 3-5 mins, until the chicken is cooked through.
- Meanwhile, heat the medium saucepan with 1 tsp oil on medium-high heat. Once hot, add the pak choi and spring onion and cook for 2-3 mins. Feel free to add additional veggies such a broccoli, carrots, or mung bean sprouts and cook until tender.
- Add the rice and a splash of water. Break the rice up with a wooden spoon, then cover with a lid and cook for 2-3 mins, until the rice is piping hot.
- Check your chicken is cooked through by cutting a large piece in half; the flesh should be white and the juices running clear.
- Serve the rice topped with the honey sesame chicken. Garnish with the remaining sesame seeds.
