I just sat down after being at Newark High School all morning.

They have a home economics teacher (yes, they still exist), and she convinced her 2nd, 3rd, and 4th period classes to take the @1803eatingchallenge that we set up.  The 1803 eating challenge is simply this…”if it ain't grown in Ohio, then we ain't eatin’ it.”  For the month of January, every last ingredient that I’m eating will be grown in Ohio.

We had sweet potato hash from Birds Haven Farm.  We had baked oatmeal from Stutzman Farm.  We had egg casserole from Copia.  Black beans from Shagbark and herbs for flavoring came from Old Mr. Bailiwick’s, and we also had Ohio honey and maple syrup to drizzle over everything.  Warm apple cider and tea from herbs that they grew right outside their classroom rounded out a wonderful meal.

Best part?  3 different classes means 3 breakfasts!

We are running out the rest of the Apple Cider this week so enjoy these last half gallons and don’t forget how good it is warmed up on the stove with a cinnamon stick in it...good golly.

We are also putting some variation of potatoes, sweet potatoes, garlic, and apples in the boxes this week so a “breakfast hash” would be awesome…don’t be afraid to throw apples in that breakfast hash.

Maybe even add some eggs…

Storage:   Shiitakes will keep for a couple of days if stored in the fridge, loosely covered with a damp paper towel.

Storage:  Keep on the counter.

Storage:  Store in a resealable container with a paper towel to absorb excess moisture.

Gold Ball Turnips

Storage:   Store in your crisper drawer.

Microgreens

Storage:  Keep microgreens between damp paper towels, and make sure they are cold and covered in a resealable bag or container. Wrapped this way, they'll last in the fridge for about a week. Keep greens covered right up until they hit the plate—this will ensure that they don't wilt or dry out.
