This week I have listened to a couple of podcasts about the dire situation many of the people in our country are facing as it relates to both their personal health and the supply chain issues of the conventional food system.  

Both of these issues we have been able to circumvent as we continue to be supplied with the tastiest and most nutritious food from our very own OHIO growers.

Does it sometimes get redundant?  Yes
Does it sometimes come with bugs on it?  Only once in a great while
Does it occasionally look a little wonky?  Sure

But almost always its the most gorgeous, freshest, tastiest fruit and veg we have access to.

I can’t apologize enough that we have not had a pile of strawberries for everyone (it's one of those things that makes my heart hurt), but we are hoping to make it up with blueberries and raspberries.  

2 things happened...1 good and 1 bad.  

Good - almost all of our strawberry suppliers were able to sell all of their stuff direct to the consumer BECAUSE THE DEMAND FOR LOCAL FOOD HAS GONE UP!

Bad - the week of freezing at the beginning of May destroyed a bunch of the plants' flowers that were already budded.

Now, on to the current week.  In the last 2 weeks, we have begun to get broccoli, zucchini, fresh carrot bunches, slicer tomatoes, cucumbers, and beets (with tops)!  It’s all looking so good and don’t forget you can throw almost ALL this stuff right on the grill!!

Lastly, we had a special thing planned that we just didn’t have enough time to pull off this week but is definitely ready to go for next week.

Quick side story:  She and I started our companies at almost the exact same time.  In the beginning, I would meet her at OSU production facility once a week in the early morning and load up all of her orders.  
She and I would then spend the day driving around to all of her stores and stocking the shelves, throwing out the outdated product, laughing at how crazy we were to try and start local food companies, and generally just make fun of ourselves.  
Skip ahead 6 years and she is now shipping all over the country with this awesome product right out of Columbus, OH-IO!

Allergens and dislikes: We do not make accommodations for dislikes since the goal of a CSA is to support our farmers and everything they grow. We will do our best to substitute out the allergens we recognize per the list on your account. We cannot guarantee substitutions every week so if an item you cannot have makes its way into your box please share it with a friend (they may just get hooked, become a Yellowbirder themselves, and you'll both get a $10 referral credit!)

Asparagus

Storage:   Stand the asparagus up in a glass or jar with about an inch or two of water, making sure all the ends are sitting in the water. Loosely cover the asparagus with beeswax and store in the refrigerator for up to a week.

Spring Vegetable Couscous

Edible Pea Pods

Storage:   Store peas unwashed, unshelled in the refrigerator in a perforated bag or unsealed container that will allow some air to circulate around them. They will keep for several days. Fresh peas can be blanched in boiling water for one to two minutes and subsequently frozen for up to six months.

Spigarello

Storage:   For a bunch of whole leaves, it's all about avoiding excess moisture. Store in your crisper drawer.

Recipe: Pasta with Spigarello, Bacon, and Garlic

Sprouts (Clover or Micro)

Storage:   Place the sprouts in a plastic bag with a wet paper towel to keep them moist. You can also store sprouts in a bucket of icy water and change the water every day.

Cipollini Onions

Storage:   Store in a cool dry place in your pantry.

Recipe: Sweet Potato + Kale Ravioli with Lemon + Thyme Cream Sauce

Kale (Curly/Red/Lacinato)

Storage:   For a bunch of whole leaves, it's all about avoiding excess moisture. Wrap the bunch of kale in a layer of paper towels, and store in a container in the refrigerator crisper drawer. The kale should be in great shape for 3-5 days.

Tomatoes (Fireworks/Slicers)

Storage:   Perfectly ripe tomatoes should be kept at room temperature on the counter away from sunlight.

Thyme

Storage:   To keep thyme tasting fresh for even longer, roll it in a damp paper towel and wrap it in beeswax wrap. For long term storage stand your thyme sprigs up like a bouquet of flowers in a drinking glass or jar with about an inch of water inside.

Sauteed Swiss Chard Recipe with Bacon

Broccoli

Storage:   Consume fresh broccoli as soon as you can as it will not keep long. To store, mist the unwashed heads, wrap loosely in damp paper towels or beeswax wrap, and refrigerate. Use within 2 to 3 days. Do not store broccoli in a sealed container.

Collard Greens

Storage:   To store fresh collard greens, place the greens in an air-tight container without washing them first.

Radishes

Storage:  Remove the leaves and store radishes in the crisper of the refrigerator. They will keep for up to a week. If storing the greens consumer within 3 days.

Green Onions/Scallions

Storage:   To keep green onions fresh, fill a tall glass or container with 2 inches of water and place the roots of the onions in it. Then, cover the jar with a lid. Place the jar in your refrigerator, but remember to change the water every few days.

Swiss Chard

Storage:   Place chard in a container with a paper towel where it will keep fresh for up to 5 days. If you have large batches of chard, you can blanch the leaves and then freeze them.

Market Cucumber 

Storage:  Wrap in beeswax wrap and place in your crisper drawer.

Recipe: Boss Salad

Zucchini

Storage:   Store zucchini unwashed in a perforated or loosely closed plastic bag for up to one week. Don't wash or cut up the zucchini until ready to use. To freeze zucchini for later use, wash and cut into 1-inch chunks before freezing in a zipper-topped freezer bag.

Bok Choy

Storage:   To store this green, wrap it loosely in beeswax wrap and keep it in the refrigerator for at least a week.

Carrots

Storage:  Chop tops off, peel and store in a sealed mason jar glass filled with water in your refrigerator- you can even save floppy carrots with this method!

Romaine Lettuce

Storage:   Store Romaine lettuce unwashed in a container in the refrigerator. Wash right before eating.

Sweet Potatoes

Storage:  Store in your pantry

Mushrooms

Storage:   Place whole, unwashed mushrooms in a folded over brown paper bag and store in your fridge.

Hydro Lettuce (Artisan or Butterhead)

Storage:   Hydro lettuce with the root attached will last about a week if treated kindly. Remove leaves right before consumption.
