Story time: 

Last year, one of our YB members' kids was presenting his 3 broiler chickens at the knox county fair 4-H auction.  He hand wrote me a letter, inviting me to come and see his birds, and maybe bid on them at said auction.  

Turns out, this is a huge deal.  I didn’t grow up in 4-H, but the auction at the fair is the crescendo of a season's worth of work.  Meetings, feed, projects, more meetings, and finally the fair!  I was pumped...I grabbed $30 and headed out the door hoping to score the Yellowbird team it’s first fair livestock purchase.  

I find a friend and sit down in a barn full of people (pre-Covid), hundreds of kids waiting with their animals to march them in front of the auctioneer throughout the day.  The bidding starts for the first kid and I notice that the opening bid is beginning at $300.  

I look at my buddy, who is there representing his company, and I ask if that is normal.  He looks at me and laughs.  “Yeah, I’m planning on spending a couple thousands dollars today!”  

Needless to say, I didn’t even get a bid in.

This year though...This year I was ready.  

Last Saturday, I had the checkbook in pocket.  I showed up a little early and realized that there were still a couple hundred kids that were ahead of my guy.  Went home and had lunch and came back.

Game time:  Dallas Krabill brings out the best 3 broiler chickens in the whole state and I can tell the bidding is going to be fast and furious.  

**Ok, I might have built that last part up a little bigger than it actually was.  It was actually about a quarter of the people (Covid) from the year before, and everyone there is very gracious about bidding for each kid so that no one is left without a buyer.

...but they were some fine looking birds.  

The Yellowbird took them home in quick fashion...and by home, I mean they get donated.

Arugula

Storage:   Arugula should be refrigerated and kept dry. Storing the arugula in a resealable container paper towel can help the greens stay dry.

Blackberries

Storage:  Put them in a shallow container and place them in a cool spot or in the refrigerator as soon as you can after picking. Fresh blackberries are very perishable and should be eaten or frozen with two or three days of picking.

Broccoli Sprouts

Storage: Store in the plastic clam shell in the fridge.


Recipe: Add to warm meals such as rice dishes, stir-fries, omelets, soups or freshly made burger patties. Other interesting uses for sprouts include blending them into smoothies and pancake batters or grinding them into a paste to spread on bread, crackers or vegetables.


Candy Onions

Storage:  Whole onions are best stored in a cool, dry, dark and well-ventilated room. Ideal places include the pantry, cellar, basement or garage. Peeled onions can be stored in the fridge for 10–14 days, while sliced or cut onions can be refrigerated for 7–10 days.

Storage:   Store in your crisper drawer.

Cherry Tomato Medley

Storage:  Perfectly ripe tomatoes should be kept at room temperature on the counter away from sunlight.

Cilantro

Storage:  Snip off the bottom of the stems and ensure the leaves are dry. Fill a jar or a water glass partially with water and place the stem ends of the herbs into the water in the jar. Loosely cover and store in the fridge

Elote Grilled Mexican Corn Salad

Cocktail Cucumbers

Storage:   Wrap the cucumber in beeswax wrap and store in the crisper drawer. Keeping the cucumber wrapped minimizes the amount of moisture. This should keep it cold enough to stay fresh for 7+ days.

Curly Kale 

Storage:   For a bunch of whole leaves, it's all about avoiding excess moisture. Wrap the bunch of kale in a layer of paper towels, and store in a container in the refrigerator crisper drawer. The kale should be in great shape for 3-5 days.

Curly Parsley

Storage:   Fill a jar partially with water and place the stem ends of the herbs into the water in the jar. Loosely cover and store in the refrigerator.

Fairy Tale Eggplant

Storage:  Store whole fresh eggplant at room temperature. Keep it away from melons, bananas, and other ethylene producers in a bowl or basket on the countertop. Once ripe, refrigerate in the crisper drawer.

Green Beans 

Storage:   Store unwashed fresh beans in a reusable container in the refrigerator crisper. Freezing Green Beans: Rinse your green beans in cool water and then drain. Cut the ends of the beans off and then cut the beans to whatever length you prefer.

Green Bell Peppers

Storage:   Refrigerate peppers, unwashed, in the vegetable drawer. Orange, Red and Yellow peppers will last four to five days; Green, about a week.

Leeks

Storage:  Wrap leeks in beeswax wrap when storing in the refrigerator. Do not trim or wash before storing it. Leeks will last up to two weeks in the refrigerator since they are super fresh!

Microgreens

Storage: Store in the plastic clam shell in the fridge.

Okra

Storage:  Refrigerate unwashed, dry okra pods in the vegetable crisper, loosely wrapped in perforated plastic bags. Okra will only keep for 2-3 days. When ridges and tips of pods turn dark, it needs to be used immediately

Peaches

Scallions

Storage:   To keep scallions fresh, fill a tall glass or container with 2 inches of water and place the roots of the onions in it. Then, cover the jar with a lid. Place the jar in your refrigerator, but remember to change the water every few days.

Shishito Peppers

Storage:   Refrigerate peppers, unwashed, in the vegetable drawer.

Sugar Cube Cantaloupe

Storage:   For best flavor, eat at room temperature. Melons may be stored in the refrigerator for a short time. They will lose their flavor and color if stored too long.

Sweet Corn

Storage:   Store the ears wrapped tightly in beeswax wrap in the refrigerator. Consume within 3 days or freeze. 
**You might find little bugs, but it’s nothing to be alarmed about. Organic corn is especially susceptible to earworms. Simply remove it and cut off the damaged area. The rest is more than fine to eat!

Watercress

Storage:  To keep watercress fresh for up to 5 days, store it in the refrigerator in a deep bowl, upside-down with the stems submerged in cold water and the leafy tops covered with a plastic bag. Drain well before using.
