Message from Meredith
I’d like to share a vague Yellowbird memory with you all because there’s a strong chance you’ve experienced the same thing or you’re experiencing it right now as you unpack your mini box.
A few years ago, I remember opening my mini box feeling waves of excitement paired with anticipation. The boxes were beautiful, the colors of the produce just so lovely and everything even smelled wonderful. The whole process really felt like I was opening up some kind of nutritionally charged gift.
Then, I would take out each item in my kitchen and try to guess what each item was. The most challenging items for me to recognize were the root vegetables and the greens. And to be honest, these items were often the ones that sat in my fridge the longest. In essence, the foods I knew the least about were always ones getting left behind.
Ok - that’s the vague memory from 3 years ago. Fast forward to today: I still experience all the same joys of opening my mini box but now my fridge rotation is completely different!
The same root vegetables I ignored before, like radishes, beets, rutabagas, parsnips, and turnips, are now some of my favorites. And, my relationship with greens has completely changed. Gone are the days when I would only eat lettuce! I now sauté beet greens for pete’s sake! And, my new addiction to greens has extended into my garden. My boyfriend and I grow cabbages, bok choi, watercress and sprouts.
So remember, change doesn’t happen overnight! Especially when it comes to the food we eat.

Food tip for the week: The watercress greens in your box this week are loaded with vitamins and minerals!! They can be eaten raw, wilted or lightly sautéed. Treat them like you would sprouts - add them to whatever your heart desires. Mix with eggs, pasta dishes, soups or top on sandwiches or wraps.
