I had to brag about y’all last night.  

I went to a “Meat Free Monday” dinner as a guest speaker and talked about the Yellowbird community to about 30 people.  They were not all vegan or even vegetarian (nor am I), just folks that are trying to make positive lifestyle changes.

I called our winter group, the “Hard-Core Locavores”.  

Don’t brush past this in your life.  You have made a conscious choice to support your Ohio growers in the toughest months of the year, by getting your produce and in many cases you entire grocery list, from our own growers.

This is a HUGE deal.  Each dollar you spend goes DIRECTLY to the grower!  If you want to watch it happen sometime, let me know and I will literally put you in our vans and trucks and you can present the check yourself!  

It’s powerful to be a part of the change.  I listen to a lot of dire stories and statistics about our soil, our food, and our health but you all give me so much hope.

We are “being the change”... WE ARE THE FOODSHED!

Spicy Roasted Daikon Radish French Fries

This little recipe and blog are great for knowing what to do with them.

If you ever wonder what to do with the herbs (thyme, parsley, sage etc.), just use them on anything that you would use salt on...I’ve used herbs this entire month instead of salt.  

Butternut squash makes a great lunch.  Cook it the night before and just put it in the fridge to reheat the next day.  

Never forget, “Put A Bird On It!”

Storage:  If you don't have a lot of apples, the refrigerator is a good option. Place them in the crisper drawer in an opened container with holes in it or cover the apples with a damp paper towel.

Shiitake Mushrooms

Storage:   Shiitakes will keep for a couple of days if stored in the fridge, loosely covered with a damp paper towel.

Tomatoes

Storage:  Keep cherry tomatoes at room temperature for the best flavor. You can keep them in a bowl on the counter for super easy, healthful snacking. At room temperature, they will keep for up to three days.

Hon Tsai Tai

Storage:  Store hon tsai tai in a container in the hydrator drawer in the refrigerator. The leaves will wilt if allowed to dry out.

Butternut Squash

Storage:    Store your fresh, uncut squash in a cool, dark place, such as a basement or closet, where sunlight won't hasten its ripening. Under the right storage conditions, your butternut squash should last two to three months.

Microgreens

Storage:  Keep microgreens between damp paper towels, and make sure they are cold and covered in a container. Wrapped this way, they'll last in the fridge for about a week. Keep greens covered right up until they hit the plate—this will ensure that they don't wilt or dry out during service.

Recipes: Microgreens are often used in Wraps, Sushi, Stirfry's, Soups, and Spring Rolls. Although fragile, microgreens are versatile and flavorful and can compliment any dish

Spinach

Storage:  Store fresh spinach in a clean container wrapped with paper towels. Place it in the refrigerator in the crisp drawer to save the greens for up to ten days. Containers will protect the greens from being moved around or crushed like they would in bags. Paper towels absorb the moisture, and keep your spinach fresh.

Candy Onions

Storage:  Whole onions are best stored in a cool, dry, dark and well-ventilated room. Ideal places include the pantry, cellar, basement or garage. Peeled onions can be stored in the fridge for 10–14 days, while sliced or cut onions can be refrigerated for 7–10 days.

Butterhead Lettuce

Storage:   Store greens in a container with a paper towel to absorb moisture. For hydroponic greens, keep attached to main bulb until ready to eat.

Recipe: French Salad 

Thyme

Storage:  To keep thyme tasting fresh for even longer, roll it in a damp paper towel and wrap iy in beeswax wrap. For long term storage stand your thyme sprigs up like a bouquet of flowers in a drinking glass or jar with about an inch of water inside.

Parsley

Storage: To keep fresh parsley in the refrigerator for several weeks, wash the entire bunch in warm water, shake off all excess moisture, wrap in paper towel and seal in a plastic bag. If you need longer storage time, remove the paper towel and place the sealed bag in the freezer.

Storage:  Store in your pantry.

Storage:  Store in your refrigerator.

Storage:  Store in your pantry.

Acorn Squash

Storage:   Winter squash will last up to a month in a cool dark cellar or storage area. Ideally, only cut or cooked acorn squash should be refrigerated.

Daikon Radishes

Storage:   Remove the leaves and store radishes in the crisper of the refrigerator. They will keep for up to a week. If storing the greens consumer within 3 days.

Swiss Chard

Storage:  Place chard in a container with a paper towel where it will keep fresh for up to 5 days. If you have large batches of chard, you can blanch the leaves and then freeze them.
