When we started this company in 2014, there was one other group that was doing a similar project that was completely local food.  They were called Great River Organics and then had a really nice program and following.  

 

Over the years, they decided to do what they do best which is GROW FOOD.  They no longer have a membership base, but they sell wholesale to places like Whole Foods, and over the last 18 months or so they have brought us MANY wonderful foods from their collection of Ohio Organic Farms.

 

This week, we have the absolute sexiest yellow potatoes.  Yes, folks, I used the word sexy to describe a potato.  These little beauties are what chefs would clamor for to put beside a nice cut of meat or a gorgeous plant-forward entree.  They will absolutely delight the lingering winter taste buds and also look astonishing.  

 

Always remember that these are literally pulled from the soil.  

 

Have you have seen a potato begin to grow “eyes”??  That is all it takes to grow MORE potatoes.  You take that “seed potato”, cut it in half and bury it 6-8 deep.  Over the season it will grow a big green plant above ground.  Keep hilling the dirt up around that green as it continues to grow.  Eventually, that will turn brown, die, and fall over.  

 

At that point, you dig up the treasure...every time I do this I am astounded that all that time,
in the dirt below the ground,
that little half a tater,
turned into 8-20 MORE TATERS!  

 

Where did they come from?  Obviously the soil.

 

What could possibly be in the soil to make this happen?  Water, Bacteria, Fungi, Macronutrients, Micro nutrients, Gases, Viruses, Minerals...

 

IF done right...THE ENTIRE UNIVERSE!!

*A foodshed is the geographic region that produces the food for a particular population. The term is used to describe a region of food flows, from the area where it is produced, to the place where it is consumed, including: the land it grows on, the route it travels, the markets it passes through, and the tables it ends up on. "Foodshed" is described as a "socio-geographic space: human activity embedded in the natural integument of a particular place."[1] A foodshed is analogous to a watershed in that foodsheds outline the flow of food feeding a particular population, whereas watersheds outline the flow of water draining to a particular location. Through drawing from the conceptual ideas of the watershed, foodsheds are perceived as hybrid social and natural constructs.

Arugula

Storage:   Arugula should be refrigerated and kept dry. Storing the arugula in a resealable container paper towel can help the greens stay dry.

Beet Greens

Storage: Store in a container in your crisper and use within 1-2 days.

Double Lettuce Heads

Storage:   Keep attached to the main bulb until ready to eat.

Evercrisp Apples

Storage: Store in your crisper.

 




Garlic Bulb

Storage: Store in your pantry.

Green Cabbage

Storage:   Store in your crisper. Wrap it in beeswax wrap after cutting into it.

Mung Bean Sprouts

Storage: Store in the clamshell in your fridge.

Sprouts are delicious, versatile and easy to add to your diet by topping them on your favorite meals (great with hearty soups, stir-fries, burgers, and more!).



Mushroom Mix

Storage: Store in the clamshell in your fridge.

Rainbow Carrots

Storage: Remove the greens from the roots. Peel the carrots and store in a sealed mason jar of cold water in the fridge- they will keep crisp for weeks!
