If you are not making the best salads on the planet right now, then you are doing it wrong.

 

 

Let me throw you some “Pro Tips”...

 

-Never let it run out…just keep adding to the salad bowl you made the day before

-Keep all the “wet” ingredients separate…your leafies will stay dry that way

-The more varieties the better…3 lettuces, 2 kales, spinach, asian greens…that’s a decent start

-Fruit, nuts, and raisins…yes, yes, and yes

-Rice/Quinoa…I know a few people that put warm rice onto their salad and it’s their favorite way to eat it

-You like dairy???  Then add that cheese…including MY favorite…COTTAGE cheese

-Keep a couple of different healthy dressings around, but also don’t be afraid to just cook an egg over easy and let the yolk run down!

-Don’t stop…it’s VERY hard to overeat raw foods, so just pile it high and deep and stop feeling guilty about it

 

The strawberries this week are just an absolute treat as you know.  Eat each one with intention and thank whoever you attribute the goodness in your life to.  

 

For those of you keeping score at home, RAMP season is officially done.  Think about the last 3 weeks and how many ramps we were able to procure and get out to you…how fun, unique, healthy, and delicious they were…and they are DONE for the year.  That’s what eating seasonally is all about!

*A foodshed is the geographic region that produces the food for a particular population. The term is used to describe a region of food flows, from the area where it is produced, to the place where it is consumed, including: the land it grows on, the route it travels, the markets it passes through, and the tables it ends up on. "Foodshed" is described as a "socio-geographic space: human activity embedded in the natural integument of a particular place."[1] A foodshed is analogous to a watershed in that foodsheds outline the flow of food feeding a particular population, whereas watersheds outline the flow of water draining to a particular location. Through drawing from the conceptual ideas of the watershed, foodsheds are perceived as hybrid social and natural constructs.

Basil


Storage: Store in the fridge in the original container and use quickly.

Recipe: Vegan and Gluten-Free Ravioli



Beet Greens


Storage: Store in the crisper and use within 2 days. 

Recipe: Cracked wheat with sweet potato cubes and tahini sauce



Beets


Storage: Remove from the greens and store the roots in a sealed container in the crisper.

Recipe: Baked Beetroot Falafels 2.0

Black Spanish Radishes


Storage: Wrap radishes in a damp paper towel and place them in a food storage bag in your crisper. 

Recipe: Vegan Banh Mi with Lemongrass Meatballs




Carlton Greens


Storage: Place in a food storage bag in your crisper.

Recipe: Lemongrass soup with noodles and greens (sub for bok choy)



Cilantro


Storage: Fill a mason jar with water and place the stems in the jar. Partially cover with a bag.

Curly Kale


Storage: To avoid excess moisture wrap the kale in a layer of paper towels and store in a storage bag in the crisper drawer.
